With the cold weather sticking around I have been trying to use our slow cooker a bit more to try and make hearty meals the whole family can enjoy, with minimal effort.
This beef stew dish is not only tasty but so simple too, with little time to prepare you can get it all done and leave it to cook.
Another reason I love cooking stews is the fact you can use pretty much any vegetable or meat you want in it. So although this is our recipe, if we do not have an ingredient we will just mix it around a little and use what we have in our fridge.
It is also great as leftovers too!
When we make ours we have it with new potatoes and dumplings however this is your own choice. If you are adding them to the slow cooker your new potatoes will take about an hour and the dumplings 30 minutes.
So if you fancy giving this recipe a try, here is what we have in ours.
- 400g diced beef
- 4 carrots (sliced)
- 2 parsnips (sliced)
- 1 swede (sliced)
- 2 leeks (sliced)
- 2 beef oxo cube
- 500ml water
- 1tsb thyme
- Fry off the beef in on the hob to brown off
- Add all the ingredients to the slow cooker
- Pop on the lid and cook on slow for 6-8 hours
- To thicken the sauce a little add 2 tbs plain flour to cold water (mix well) and then add this to the stew for 30 minutes
