*Recipe* Lemon Meringue

This is probably a classic for most and is the perfect end to a weekend or for a pick me up cold after lunch during the week!
I find this recipe fairly easy to follow and delicious, happy baking:

Ingredients :

Shortcrust Pastry –

  • 225g Plain Flour
  • 125g Butter
  • Pinch of salt
  • 3-4 tbs cold water

Apple & Berry Crumble – From Simple


  • 2 large Bramley apples
  • 1 Lemon
  • 350g Frozen blackberries
  • 3 tbsp caster sugar
  • 225g plain flour
  • 150g butter
  • 50g Demerara sugar
  • 100g Porridge oats
  • Greek yoghurt with cinnamon to serve, optional
  1. Preheat the oven to 200c /gas mark 6
  2. Peel, core and chop the apples into small chunks. Cut the lemon in half and squeeze the juice over the apple and mix well.
