Desserts are desserts and with the following recipes, you’ll have the chance to treat yourself without any guilt. So, keep an open mind, head to the kitchen, and get ready to have some fun.

Peanut Butter Chocolate Chip Cookies

Ingredients:

  • 1 cup peanut butter
  • ½ cup vegan butter
  • 1 cup granulated sugar
  • 1 cup vegan chocolate chips
  • 1 ½ cups all-purpose flour
  • ½ teaspoon salt
  • 1 teaspoon baking soda
  • 3 tablespoons dairy-free milk (e.g. almond, oat, soy, cashew, etc.)

Prepare: In an electric mixer, add the butter and sugar to create a cream and add the peanut butter.

In another bowl, mix the flour, baking soda, and salt. Use a spoon to mix when you add the wet ingredients to create your crumbly dough. Combine all ingredients, add soy milk as needed, then include the chocolate chips in the mix. Preheat the oven to 375 degrees Fahrenheit and roll the dough into big balls.

Once you’ve placed these in parchment paper on a baking tray, bake them for approximately 12-15 minutes. Don’t forget to let the cookies cool before serving yourself a cup of dairy-free milk to eat them.

Vegan Oreo Ice Cream

Ingredients:

  • ⅓ cup sweetener (e.g., maple syrup, plain sugar, coconut sugar, honey, agave, brown sugar, etc.)
  • 4-6 Oreos o homemade vegan Oreos
  • 1 ½ teaspoon pure vanilla extract
  • ⅛ teaspoon salt
  • 1 ½ cup canned coconut milk
  • ½ cup of dairy-free milk (e.g., almond, oat, soy, cashew, etc.)

Prepare: Get all of your ingredients, except for the Oreo cookies, in a bowl. Then, read its instructions and combine all ingredients inside of it for those with ice cream makers.

However, if you don’t, just freeze the mixture in ice cube trays. When they are frozen, take them out of the freezer and blend them using a high-speed or regular blender.

When you are done, grab a bowl and enjoy your homemade ice cream. Store the rest in the freezer. Numerous websites will allow you to immerse yourself in the magic of vegan desserts. Although it’s encouraged to eat mostly plant-based foods, switching the routine and going for something on the sweet side is perfectly okay. Life is about balance, learning how to mingle two or more tasks while striving to better yourself.
