Wetter vegetables like carrots, tomatoes, and broccoli work best, but as long as you’re staying away from hard vegetables like marrow or swede, anything should be fine. Cook on a low heat without stirring for 10-15 minutes, then top with grated cheddar cheese and serve in big slices with a side salad.
Chili is always a good shout. There’s lots you can do with it and it’s dead easy to make. A great recipe involves browning about 500 grams of beef mince in a skillet. While it’s cooking, get a large pot or a saucepan and fry a medium sized chopped onion and a crushed clove of garlic in a couple of tablespoons of olive oil on a low heat. Before the onions start browning, add the mince along with two tins of chopped tomatoes and a drained tin of kidney beans. Stir and simmer on a low-ish heat whilst covered. Add condiments to taste to bump up the flavour: ketchup, a few cubes of dark chocolate, a teaspoon full of Marmite, a couple of bay leaves, a pinch of basil and oregano, plenty of black pepper, a cube of beef stock, and a couple of teaspoons of chili powder. Add some chopped fresh chilies for an extra kick. 30 minutes into cooking, add a well-sliced red pepper and a sliced carrot. Putting them in later means they keep more crunch. Give it another 30 minutes, then serve with rice, or if you’re having it the next day, it’s easy to enjoy with a couple of slices of buttered brown bread.
