Good morning and welcome to our first meal plan of September! I’m back to work today after 6 weeks off in the summer holidays and I know this week is going to be a real struggle.
Firstly work is going to be manic with the new term here plus catching up with the bits that came through during the holidays but also as I have just been so relaxed during the break.We’ve had no routines and hardly any rules! Each day we have just taken it as it came along.
So, although it will be tough getting back into it all, I’m looking forward to getting a routine going again.
With the above in mind I have gone for super simple meals this week, knowing I’m likely to be tired I want meals that are quick to make and no stress.
Here is what we have on the menu this week:
Chilli burritos – Chilli is already made and in the freezer so this is a quick back to school meal for me to do.
Pancakes – First day back at school for the kids so I’m going to make one of their favourites.
Chicken fajitas – Again this is a quick meal to cook and one I know that we will all enjoy.
Spagetti bolognaise – Again the bolognaise has been made, just needs defrosting and some spagetti made.
Freezer food – We survived the week, so it is feet up and lazy frozen food tonight. Likely to be chips and cod fillets 🙂
Chicken, bacon and leek cottage pie – This recipe looks delicious so I can’t wait to give it a try.
Stew – I’m not sure whether to stick to our normal beef stew or try a new recipe out so I will have a look around.
Nothing exciting but some simple meals to get us through this manic week.
