Our weekly meal plan – 30th January 2023

Here we are again back again for a meal plan and at the end of January at the same time.

January is a funny month, it feels like the longest one of the year but then also disappears the quickest too, however, I have to say I am now ready for the lighter morning as the wake-ups at the minute are hard! We have been a bit AWOL recently and that has partly been down to tiredness but also I have just got a new job so I am currently trying to balance getting set to role change and then also keeping on top of everything else, but we are getting there.

This week’s meal plan is a bit hit and miss too, after not sticking to it for a while, I am trying to get back on track with dinner options and make sure there is something there that everyone likes. Trying to balance a fussy family is not always easy though and this week is no different. There are some meals on there that I know won’t please everyone but others are real crowd-pleasers.

Our freezer has pretty much been run down too, so there will be plenty of batch cooking coming up in the near future I also need to start topping up on the essential favourites, for days when we just need a little bit of comfort.

Anyway, let’s get back to this week’s meal plan.

Our weekly meal plan – 30/01/23

Monday –

Pressure cooker gammon, new potatoes and veg – Super simple and hopefully some leftovers for lunch the next day too!

Tuesday –

Tuna pasta bake – It is back!

Wednesday –

Chicken curry, rice and naan bread – Simple meal as I am using Asda sauce but it is delicious nonetheless.

Thursday –

Spaghetti bolognese – This is a portion from the freezer from my last batch of cooking. I love it when I just need to reheat and cook some pasta or rice, makes life so much easier!

Friday –

Freezer food – I am keeping it simple to end the week, sometimes it is just about good food which is uncomplicated. Likely to be pizza or chicken kievs.

Saturday –

KFC Zinger Burger Fakeaway & wedges – We never did try this last time, so looking forward to giving it a go this time around.

Sunday –

Cottage pie – It feels like it has been a while since I made these, so these should go down well. I tend to make more of the mince mixture and freeze it so I can make more pies midweek with minimal fuss.

There are no surprises on the meal plan and it is pretty simple but it is all about just eating food we love and getting through the weeks. I almost feel like we are just trying to get to the half term and then there will be a little more time to think about some meals and get back in the kitchen cooking. It will be about getting the fussy eaters back on board and involved with the meals to ensure it works for us all, the more we all eat the same, the easier and cheaper it becomes.
