Welcome back to this week’s meal plan and our first one of the summer holidays!
Unfortunately, the sun is not really shining at the minute however we are expecting a bit of a heatwave in the coming days! With that in mind, we are going for quick and easy meals, all that require minimal effort in cooking. The last thing I am going to want to do in a heatwave is to cook too much!
Over the next few weeks, we are going to be having some building work done, so I plan to use my slow cooker as much as possible. I am lazy with our slow cooker and only use it for easy dishes that I make regularly. This needs to change though, so if you have some family favourites you do in the slow cooker please pop a link in the comments below 🙂
I am also back to dairy and yeast free as I just feel awful at the minute, my diet has been terrible and I know it needs some drastic changes made to it in the coming weeks. This shouldn’t impact our meal plans too much really.
For now though, here is this weeks meal plan.
Our meal plan – 22/07/19
Chicken fajitas – Simple and tasty, plus minimal time in front of the cooker!
Fish and chips – We have a variety of fish in the freezer to pick from.
Jacket potatoes – The heatwave is due to arrive so this is simple to make and perfect for the hot weather.
Chicken salad – Hottest day of the year due so it is a cool dinner tonight.
Sausage, mash and beans – I love simple dinners like these.
Pulled pork and wedges – Using our slow cooker recipe means this requires little effort from me.
Birthday meal – It is my Mother-in-laws birthday and as they are down to help with the building work it will be a family meal.
This week is all about the simple meals, ones that require minimal effort to cook and eat! I am still looking for more recipes to try out in the slow cooker, ones that even the fussiest of eaters will enjoy. If you have the perfect recipe please pop it in the comments below.
