Our weekly meal plan – 30th October 2023

Good morning and welcome back to our first meal plan in a while. 

Just recently life has got busy and although I have been planning offline, I have not been sharing those on here and I really need to get back into better habits. 

The weather has changed recently and I must admit, I love this time of the year as it is perfect for comfort meals that are a hug in a bowl. When the weather is cooler, it is always easier to get into the kitchen and cook a meal as it just doesn’t feel like you are melting. We are going to be having a lot more pies, stews and casseroles in the coming weeks and I plan on making full use of the slow cooker and soup maker.

Over the weekend I made homemade roasted tomato soup and it was delicious, I plan on trying a few other soups too without reverting back to our favourite potato and leek.

This week we are keeping the meal plan simple and having some family favourites, plus using up some of the items we have in the cupboard as I am starting to stockpile things again, which I don’t have space or money for! 

Anyway, let’s get back to this week’s meal plan.

Our weekly meal plan – 30/10/23

Monday –

Hotdogs – This has been requested by Ethan as it is his favourite. I may do them with chips or even mozzarella sticks, I will see what everyone fancies nearer the time.

Tuesday –

Freezer food – Tonight is a late work night for me, so I plan to use one of the batch-cooked meals from the freezer for a simple dinner.

Wednesday –

Salmon rice bowl – I have recently signed up to RWL and as well as the fitness, there are some great recipes on there. I plan on giving this one a try as it looks delicious and is also packed full of goodness.

Thursday –

Tuna pasta bake – One for the kids as everyone enjoys this and it makes like a little easier when that is the case.

Friday –

Toad in the Hole – I am trying out a new recipe tonight, so I am hopeful that it works out so I can share it. The kids are a fan of this as they love Yorkshire puddings and sausages, so this is a win-win in this household.

Saturday –

BBQ – We are having our fireworks tonight, so keeping it simple with 

Sunday –

Slow cooker lamb shanks – We recently did a Costco run and picked up some lamb shanks. I love their lamb shanks, however, the cost of meats has risen so much recently.

I think that sums up the shopping bill in general now, the cost of everything has gone up so much. It is no longer a cheap option to eat healthier as everything from fruit to veg and meat has gone up so dramatically. A simple meal of Tuna Pasta used to be a few pounds but now with the cost of the cheese and tuna, it is well over £5 a meal, which I know in the grand scheme of things is not a huge cost, but it is up on last year.

Over the coming weeks, I am going to try and look to balance between healthy options and cheap meals (which I am not saying are unhealthy). It may sound simple, but with a fussy eater in the house, some things are easier said than done!
