Good evening and welcome back to our last meal plan of April.
It is a strange old time at the minute, we as still pretty much housebound apart from essentials and the days are blurring into one however the weeks are still flying by for us. I don’t think it is how any of us imagined 2020 would start out and who knows how it will end. The only thing I am learning at the minute is how grateful I am for what we have and I intend to make the most of it when this is all over.
Last weeks meal plan was a bit all over the place, we stuck to it mostly, it just wasn’t on the days it was intended! None the less, we were well fed, in fact we’ve been a little indulgent in baking lately. It started as something to keep the kids entertained then it tasted good so I carried on. As lovely as this was, I don’t think our waistlines are agreeing with it, so Daddy Vs Work and I are going to have to work on that in the coming weeks.

Our meal plan – 27/04/20
Pizza – From the freezer as it is quick and simple!
Chicken pitta & salad – Something quick and simple that hopefully, both kids will eat.
Spaghetti bolognaise – Already portioned in our freezer so I just need to cook some spaghetti to go with it.
Chicken and ratatouille – I love ratatouille and it is a great way to get extra veggies in our diet!
Fry up – Time to use some bits up in the freezer and fridge.
Chinese salt and pepper chicken – I’m looking forward to giving this recipe a go.
Calzones – Still not made these yet…
It is just as a simple straight forward menu for us this week. With the current situation going on I don’t spend too much time picking our food for the week, I am just grateful I can get food and we have a warm meal every night.
