When I became vegan in January 2018 I was worried that my love of baking would come to a screeching halt as I had only ever baked using dairy products and eggs.
However, happily, with a bit of research, I discovered not only were there bakeries out there making amazing tasty treats that I could indulge in there are loads of amazing recipes available so I can continue to make baked goods at home for myself, friends and family.
One of my favourites treats, especially during berry season when my mum makes homemade jams, are scones! This is a quick and easy recipe that makes a generous amount of vegan-friendly scones with a great crumbly texture perfect for enjoying with plant-based clotted cream and fruity preserves. Enjoy!

Ingredients
- 475g of self-raising flour
- 50g of caster sugar
- 85g vegan margarine (I used Flora)
- 240ml plant milk (I used oat), mixed with 1 tbsp white or apple cider vinegar
Instructions
- The first step is to preheat your oven to 200c / 390f
- Next, prepare a baking tray by lining it with parchment paper.
- Combine the self-raising flour and sugar either by hand in a large mixing bowl, or if you prefer use a stand mixer or food processor.
- Add the margarine to the dry mix, a teaspoon at a time.
- Once the margarine is fully incorporated slowly pour in the plant milk and mix until it forms a soft dough.
- Turn out the dough onto a lightly floured surface and knead briefly to bring it together.
- Roll out the dough to about a 1/2 inch thick and cut out the scones using a cookie cutter or upside-down the glass.
- Place the rounds onto the lined baking tray and brush lightly with plant milk.
- Bake for 10-12 minutes until lightly golden.
- Enjoy warm from the oven with your favourite toppings. I am loving mine with strawberry and cognac jam made by a local small business.
