Good evening and welcome back to another weekly meal plan.
They seem to be getting later and later, sorry. Just lacking a little motivation these last few weeks and yesterday I got wiped out by some sort of bug and slept pretty much most of the day. I’m still not 100% but have survived the day, just, without any naps so I’m taking that as a positive.
Last week’s meal plan did not go to plan at all. I just could not be bothered last week with dinners and took the lazy way out where possible. This week we just need to knuckle down and eat some good home-cooked meals. I hope I’m not the only one who is having a little bit of a battle when it comes to mealtimes lately, it seems as though isolation has made me lazier than I thought.
Here is our meal plan for the week:
Our meal plan – 04/05/20
Roast chicken and all the trimmings – I didn’t make this yesterday so it is dinner tonight.
Mushroom, bacon and asparagus risotto – This is a dish I got from a Slimfast menu years ago and it is still a firm favourite in this house.
Chicken and med veg – Need to get more veggies in us and this is a great way to do it, though it may turn into ratatouille again!
Calzones – The kids can help make these today.
Chinese salt and pepper chicken – I’m looking forward to giving this recipe a go.
Taco rice – I found this recipe on Slimming Eats and it looks amazing so I can’t wait to give it a try.
Curry or roast – This will all be dependant on how the week goes,
I’m hoping with a week of crowd-pleasers we actually stick to our meal plan this week! How are you finding lockdown meal times?
