I am back on track with a meal plan on time this week!
Last week was a little chaotic, so I am hoping that this week it is a little smoother and a lot less stress. We are going to have a combination of meals we know and love, combined with some new recipes we are planning to try out. The kids nodded in agreement with some of the recipes I showed them, here is to hoping they actually eat them!
During this current lockdown, I have learnt to cut myself a little slack when it comes to dinner times. It is all about picking battles and currently, I don’t want to pick any battles!
Here is what we are cooking this week:
Our meal plan – 01/02/21
Veggie chilli tortilla baskets – I have bits and pieces in the fridge to use up and this is the perfect recipe for it, plus it tastes amazing!
One-pot chorizo and pepper spaghetti – Again this is the perfect recipe for using up the last of the leftovers. It is another great recipe that is not too hard to make either.
Crispy chilli beef – This is a new recipe from the Pinch of Nom book and it looks delicious!
Peri peri chicken and rice – Simple dish that requires minimal effort from me.
Takeaway – Hooray for the weekend!
Spaghetti bolognaise – This is already in the freezer, just need to cook some spaghetti for an easy dinner.
Roast or stew – I will see what we are in the mood for towards the end of the week.
I can’t wait to give these all a go, the meal plan sounds amazing!
