How can we be at the halfway point in the Summer holidays already? This one is just flying by too quickly. Last week I was busy working on recipe ideas for the food blog and never actually got around to writing on here after the meal plan, sorry!
It has been fun being able to get creative with the food blog though and this easy McDonalds pancakes recipe is delicious, the kids loved them, even if their eyes were too big for their bellies!
Meal times in the house have been ok, I have yet to make any fresh pasta which was on my summer list to do, however, I have been cooking mostly. I need to just start working through what we have in our cupboard though as I am finding that I have odd packets of bits in there that will need to be used up. The aim is to use those bits before we go back to work and school so we have a fresh start for September.
This week I asked the kids to pick some meals they would like to eat and they have picked their favourites, this hopefully means that there will be fewer fussy eaters. The other meals are using up the JD Seasoning packets that I brought. We only used a few and then they have just sat there, so the plan is to work through them a few a week until they are all used up.
Let us see what we have on the menu this week.
Our weekly meal plan – 14/08/23
Tuna pasta bake – This was always going to be on the menu when I let the kids pick! I use the Coleman’s packet mix for this and it is so easy but delicious.
Mexican chicken and rice – We have not had this before, it is one of the JD Seasoning packets to use up. It sounds delicious though so I can’t wait to try it.
Tacos – Of course, this is another of the kid’s picks, they love tacos simply as they can create their own. We have a combination of soft and crunchy tacos too as everyone has their preference.
Jambalaya – This is another from the JD Seasoning range, I love the spices in there so I am hoping it will be delicious.
Hot dogs – We are back with a kid’s pick, this one though is one I love too.
Takeaway – It’s my birthday! So a night off cooking, with either a takeaway or if the weather plays ball a BBQ.
Casserole or something in the slow cooker! – I never really know what we fancy by the end of the week and I have my shopping delivered on Saturday, so this is likely to change.
I am hopeful that this week will be a productive and positive week with the food in our house, with the kids on board picking some of the meals, I at least know that on some days they are going to be a little less picky. This is going to be our way forward with meals too, so you will see the same things appearing most weeks as I try to balance between the ones I know will have minimal battles and the new dishes I am trying to bring in.
