Welcome to a late edition of our meal plan, the last few days have flown by and I’m only just catching up with what is going on!
Meal planning has been hit or miss over the last week, however, we have used up things we have in the house rather than reaching for a takeaway. I do need to get back into the habit of sticking to the meal plan and I’m hoping in the coming weeks to get some more meals added to our favourites list. We are also going to be looking at our shopping and the budget over the next few weeks. Overall we are pretty much on budget, but there are always places to make improvements.
For now though, here is what we have cooking in our house this week.
Our meal plan – 18/01/21
Monday –
Beef stew – This is moved from yesterday, I can’t wait as we are having it with dumplings!
Tuesday –
Chicken and chorizo paella – Super quick dinner using our pressure cooker, I should use this more often as it makes dinner so quick.
Wednesday –
Toad in a hole – Easy enough to make and one everyone eats.
Thursday –
Chicken fajitas – I can’t remember the last time we had these.
Friday –
Takeaway – I well deserved treat for the week.
Saturday –
Italian sausage gnocchi – This is a new recipe for the pressure cooker, I have no idea how it will taste but I am hopeful!
Sunday –
Roast – I’m not sure which one yet, depends on what I can get with the food shop.3
I need to make my life easier with dinners going forward, so plan to try out lots of recipes in our pressure cooker going forward. I also need to accept that I don’t have time to spend all evening in the kitchen preparing dinner. Quick alternatives are also ok for us to eat, taking the easy option is not the worst option, one thing the kids love is hot dogs but we always have them for lunch. Going forward I think I may do them for dinner occasionally, these hot dog fajita’s look like a great. If you are at home with the kids currently, these clementine & cranberry muffins sound amazing, I know Christmas is over but its still winter so these are a winner in my book!
