I can’t believe it is time for our weekly meal plan already! Even though we are in lockdown still and homeschooling, the weeks are currently flying by.
Last week’s meal plan went ok, a couple of bits got shifted around but we tried 2 new dishes last week. Firstly the pulled chicken sliders, I really enjoyed those as they were something different. Kayleigh also cooked beef enchiladas over the weekend, they were delicious. She found the recipe whilst doing a project for school, so she cooked them and I just assisted her. It is great to see her growing in confidence in the kitchen. This week Ethan is helping cook the roast on Sunday as he wants to learn how to make it.
This week is a combination of new meals and the ones we love. I am also on a bit of a health kick, not because of lockdown easing but simply because my clothes are a little snug and I feel extremely sluggish! Here is what we have cooking this week:
Our meal plan – 01/03/21
Monday –
Penne arrabbiata – I have lots of veg in the fridge that needs using up and I hate food waste so this is top of the list this week.
Tuesday –
Honey and lime salmon – This is from the Pinch of Nom book, we need to try and eat a bit more fish so I am looking forward to trying this out.
Wednesday –
Pork chops and mash – So simple but delicious and everyone will eat it!
Thursday –
Chicken chow mein – Again this is from the Pinch of Nom book, we had it a few weeks ago and it was delicious. Even the fussiest eater cleared his plate.
Friday –
Pizza pasta – We never did have this last week so planning on trying it today.
Saturday –
Burger and chips – Simple but again we never had it last week as I moved thing around so looking forward to these.
Sunday –
Roast chicken and all the trimmings – Ethan wants to cook dinner, so I will just be assisting.
The plan is this week for everything to be made from fresh, with lots of veggies to fill us all up and stop the snacking. We are still combining work and school though so I don’t expect it to be straight forward!
