Here we go, our last weekly meal plan of this academic year! I really do not know where this last year has gone, it just has flown by even if it has been a nightmare with bubbles, isolation, shifting rules….
Anyway, it has also been a year of ups and downs and our meal planning has been a little sporadic, to say the least during this time. I am hoping to use the summer holidays as a way to reset things a little and allow myself time to get back organised and try out a few family meals. I am hoping over time we will be able to add these recipes to our food blog, The Family Cookbook. This is a place I want to be able to share all our favourite recipes as the years go on.
For now, though, we are back plodding along on the meal plan, trying to make it to the end of the week. We still have a few bits left to use up in the freeze and the plan is to do this over the course of this week, then for the new meal plan, we should be able to restock and start over. Do you find that over a period of time you end up with random bits in your fridge, freezer and cupboard? I find odd pots of sauces or half a packet of nuggets tucked away. I want to use up those leftover bits and clear it all down and tidy up.
For now, though, let’s get back to this weeks meal plan and see what we have planned to eat:
Our weekly meal plan – 12/07/21
Monday –
Pasta – This will be using up some of the bits in our cupboard! I tend to make a sauce based on what we have left lying around.
Tuesday –
Fish fingers, chips and beans – So simple but a classic!
Wednesday –
Peri-peri wraps and chips – Homemade and super simple, it is our own Nandos at home!
Thursday –
Pizza – So close to the end of term, let’s have a treat midweek.
Friday –
Takeaway – We are seeing friends for the first time in a long time!
Saturday –
BBQ – Let’s start the summer holidays the right way, it will vary what we have on our BBQ depending on what we can get our hands-on.
Sunday –
Pressure cooker gammon – Depending on the weather, this will either be with mash or with new potatoes and salad.
I’m hoping that the weather starts to brighten up a little and we get to spend some more time outside that we will get a few new inspirations for dinner ideas. Summertime I always struggle as you don’t really want to spend a lot of time cooking, especially on the really hot days. I also would like to get a little bit more creative with what we cook at our BBQ, we always go for the same food, it would be nice to have a little selection going forward rather than sausages and burgers!
