Good morning and welcome back to this weeks meal plan, slightly later than usual! Half term week is here and after a birthday weekend, it has been a slow morning.
Last week’s meal plan, didn’t exactly go to plan. There were some long days at work due to the half-term approaching nad we ended taking convenience food over fresh-made food to make our lives a little easier. It was nice at the time but I am feeling very sluggish now! This week we are going to get back on track and try and to get back into cooking a few more meals. I am not going to lie though, this term is going to be busy so I am going to try and plan ahead with some bulk cooking.
We have also had a few pies from Hello Fresh, so I plan on recreating those fillings in bulk and freezing them. Then when we fancy them I am going to cheat with shop brought puff pastry and defrost the filling during the day so it is a quick dinner meal for us after week. With the colder weather here too I am planning on using the slow cooker a bit more, I haven’t used it much lately but I need to get into better habits that will save me time in the long run. If you have any good slow cooker recipes, I’d love to read about them below.
For now, though, let’s get back to this weeks meal plan:
Our weekly meal plan – 25/10/21
Monday –
Pan-fried pork loin with creamy potato and spinach salad and garlicky green beans – This is one of our Hello Fresh options this week. It looks delicious and I am looking forward to trying it.
Tuesday –
Classic ratatouille with sourdough rolls – I have so much veg to use up in the fridge, this recipe is perfect for ensuring nothing goes to waste.
Wednesday –
Honey mustard sausages with sticky red onion gravy and sweet potato mash – Another recipe from Hello Fresh. I love sausage and gravy but have never tried honey mustard sausages so looking forward to seeing how these turn out.
Thursday –
Chicken, red wine jus and mushroom stew with cheesy mash – Our last Hello Fresh recipe and this is the one I am a little unsure on, I will let you know how it turns out.
Friday –
Freezer food – We need to have a bit of a clear out in the freezer so it will be a bit of a mix and match.
Saturday –
Pizza – One of the kids favourites so it should go down well.
Sunday –
Beef & mushroom pie with mash & savoy cabbage – We are going to recreate one of our favourite meals, though I am going to batch cook the filling and freeze it for future meals.
We have a folder in our house with all the recipes we have tried over the years, some we use regularly and others we never had again. I am going to use this week to update the folder and make sure it features our favourite meals, this should make dinner selection that little bit easier going forward. It wouldn’t be so bad if the kids were not as fussy as they are, but we will keep trying. I’d love to hear what you are cooking in your house this week.
