Good morning and welcome back to another weekly meal plan and the first post of many this week as we are launching our Countdown To Christmas giveaways this week!
If you are a new reader to the blog, every year we launch a giveaway a day for either 12 or 14 days, it is our Countdown To Christmas and a great way for us to give something back to those who have been here supporting me throughout the year. I am hoping that each day it will help brighten someone’s Christmas up.
Anyway, that is later in the week, for now, though we are jumping back into our meal plan.
Last week’s meal plan was a little hit and miss again however we are cracking on again this week with some favourites and some easy dishes. We are still trying to find those family favourites that everyone will eat, it is tough still as Ethan is fussy but we will keep trying to find dishes that we all love. I have learnt to adapt meals a little to make them suitable for everyone.
I also need to get into better habits of making dinner with extra veg to make sure we are getting all the good bits to counterbalance some of the rubbish we have been eating lately and we know that with Christmas just around the corner we are likely to be eating a lot more too! I’m not going to be backing lots of different items but maybe just working on putting a selection of salad or veg on the plate will help.
Let’s get on with this weeks meal plan:
Our weekly meal plan – 15/11/21
Monday –
Tuna pasta bake – A firm favourite so always going to be a winner!
Tuesday –
Lemon chicken with Meditteranean vegetables – It has been a while since we had this but it is so simple yet delicious.
Wednesday –
Scampi and chips – Tonight we need to do a quick shop to top up fresh fruit etc so it will be a quick dinner when we get home. Can’t beat scampi, chips and tartar sauce.
Thursday –
Chilli con Carne – Easy dinner tonight as I bulk cooked this previously. It may be that we have it in burritos but we shall see.
Friday –
Chicken curry – I am going to use a jar of sauce today, just because I am being quick after a busy day at work.
Saturday –
Tacos – One meal they all eat as they can create their own.
Sunday –
Beef stew in the slow cooker – We had this a few weeks ago and it was delicious so I am looking forward to cooking this again.
It is an easy week for us really in terms of dinners, the plan is just to stay on plan and make sure we are eating up the meals we have in our home. I am hopeful that this week we will stick to plan as I need to start clearing out what we have ready for Christmas! I am going to try and be organised with the Christmas period by ordering bits and pieces such as pickles and sauces etc now. Once we have them in, there will be no rushing around nearer the time. I dread to think what the shops may be like nearer the time when there is panic buying and empty shelves!
