Good morning and welcome back to our first meal plan of 2022!
I hope you all had a lovely Christmas and New Year and stayed as safe and healthy as you could, so many plans were changed for people last minute due to COVID, here’s to hoping that 2022 sees the back of the pandemic and we all get some sort of normal life back.
This week we all return to work and school after 2 weeks off, now it has been lovely but tiring as we have a new puppy so sleep and peace are not something he is keen on at the minute. With this in mind, I am planning to make the meals this week as easy as I can but still delicious.
I don’t have plans to diet in 2022, instead, I just want to get back into better habits and healthier eating. More cooking from scratch and lots of tasty new dishes to try out hopefully but I am going to be realistic as I know life is busy and things won’t always go to plan. We are going to accept that and just roll with whatever may happen, whilst trying to stick to our better options. We will be sharing some of our recipes and new ones as we go over on our food blog, The Family Cookbook if you would like to check them out.
For now, though, let’s get on with this weeks meal plan.
Our weekly meal plan – 03/01/22
Monday –
Burger and chips – Yes these are back on the menu this week as I still have some in the freezer to use up, this is what happens when you don’t check what you have before you do the shopping!
Tuesday –
Mediterranean chicken risotto – This recipe from Slimming World sounds amazing and I can’t wait to give it a try, if it is good there should be some for leftovers the next day too.
Wednesday –
Slow cooker beef stew – It is a full day back at work today so I suspect by the time I get home I am going to be shattered, hoping to have dinner smelling amazing when we come through the door.
Thursday –
Chicken fajitas – It has been a while since I made these, hopefully, they will live up to expectations and I am going to cook some sweet potato chunks to go with it.
Friday –
Takeaway – First week back at school/work treat for getting through the week.
Saturday –
Steak and chips – With our Christmas food box from MuscleFood we received some steaks, I didn’t use these over the Christmas break but plan to go for straightforward steak and chips for dinner tonight.
Sunday –
Sausage casserole – This is a new recipe for us to try from this Pinch of Nom book, we have some sausages to use up in the freezer and I was looking for other ways on how to use them rather than the norm!
It is going to be an interesting few weeks whilst we get back into a routine, I am just hoping that we can stay on track with our meal plan. Not only to make our lives a little easier at dinner time but to also save us a little money in the next few months. Our food budget tends to go out of the window throughout the year and I really want to keep it under control to save us some cash in the coming weeks and months.
