Good morning and happy Monday everyone!
It is our last week at work and school before the February half term and we are all ready for the break. It has been a tough few weeks and we all need the time off to reset and go again.
Last weeks meal plan was almost there, we had 1 extra day where we ordered a takeaway and moved a dish around but other than that, we cooked meals every day.
I am hoping to have an easy week of dishes that I know we all eat this week to make the last few days as easy as I can for us. Next week as we have a bit more time I am going to look at maybe a risotto recipe or even doing another pie, I love a good pie dish! But with time-limited in the week it is always a weekend or holiday plan.
Anyway, lets get back to this weeks meal plan.
Our weekly meal plan – 07/02/22
Monday –
Tuna pasta bake – A super simple but tasty meal that everyone enjoys. I use the Colemans packet mix for this and it is always a winner with the kids.
Tuesday –
Chicken with Mediterranean veg tray bake – This is such a simple dish, we pop the veg in the oven in a little oil with salt and pepper to roast and cook the chicken in a bit of lemon juice and seasoning. Simple but amazing.
Wednesday –
Gammon steaks, chips and eggs – Yummy, this is going to taste amazing and I can’t wait to have this.
Thursday –
Chicken Kievs and chips – I know this is not exactly Slimming World friendly as I plan to use frozen Kiev’s and chips but they are amazing and I can get on with other things whilst they cook.
Friday –
Takeaway – End of week/term treat for us all, time to put our feet up and relax!
Saturday –
Tacos – These were a huge hit when I made them two weeks ago and having both soft and crispy taco shells went down really well. I think it appeals as everyone can make their tacos to their preference.
Sunday –
Roast or stew – I’ll leave it till the end of the week to decide what I fancy cooking. It will also depend on the veg and meat we have in or what is on offer at the supermarket.
This week’s meals are all about ease, I do not plan on spending more time in the kitchen this week. Sometimes you just need to take a step back and realise that you sometimes need to take a shortcut or have simple meals. Yes, in an ideal world everything would be fresh and home-cooked, but it doesn’t always need to be. Looking after yourself and resting up is just as important.
Next week I plan to get some inspiration for some family favourite meals and give them a go whilst we are off and I have time to cook a bit more. I would love to know your family favourite meals that you always revert back to. Many of us stick to a few favourite meals that we recycle every few weeks, it just means we know what we are having, how to cook it and that it will be eaten by everyone.
