Good morning and welcome back to another meal plan.
It has been a strange week really with everything that has been going on in the news combined with lots of things going on at work and personally, it just feels like the days have almost merged into one.
We stuck mostly to the meal plan last week and I cooked a few new dishes which were delicious, each one will appear on a meal plan again in the future. The risotto was a dish that I found on BBC Good Food and it was amazing, so simple but delicious. The only problem with risotto is the time it takes to make, it is a weekend dish for sure.
This week’s meal plan will all be about keeping it as simple as we can as I just want to get through the week. I plan to add a few new dishes in but these are quick to make and I am sure they will be delicious.
The food budget feels like it is being squeezed every month so I want us to try and cut back where we can and only buy the bits we need that week. Over the coming weeks, I am going to look for some good budget meals to try out, I’ll let you know how we get on with those.
For now, though, let’s get back to this week’s meal plan.
Our weekly meal plan – 28/02/22
Monday –
Freezer food – Keeping it easy for the first night of the week, just going to find some bits to pop in the oven to make it easy.
Tuesday –
Pancakes – You can not have Shrove Tuesday and not make any pancakes. I am not a fan of pancakes however this household will eat the biggest stack, topped with lemon and sugar or chocolate spread. The only downside for me is they take forever to cook!
Wednesday –
Chermoula Spiced Lamb and Rice – This recipe was from our Hello Fresh box we tried a few months ago and I loved it! I am going to try and recreate it at home with all the ingredients that I could get my hands on.
Thursday –
Tuna pasta bake – This is one for the kids, it is the one dish I can get everyone in this house to eat with minimal fuss.
Friday –
Takeaway – Time to switch off for the week.
Saturday –
Bang bang chicken noodles – I am giving this Pinch of Nom recipe a try, hopefully, they will go down well.
Sunday –
Pork chops, mash and veg – We have a few pork chops from Costco leftover so plan on using these up. I cook them in the George Foreman grill for a perfect cook.
Overall it is going to be a tasty week of food. I do need to do a quick check on our cupboards this week as I have a few odd sauce packets in there and we might as well get them on the menu next week to use them up. I am going to look at a few veggie pasta dishes for us to try out, something that will work out a little cheaper per portion but should also be a pretty good way to use up any leftovers that we may have lying around that week.
