Good morning and welcome back to another meal plan. This week we are sticking with some of the family favourites and easy meals to just get through to next week.
Last week was a bit of a mixed bag, we mostly stuck to plan though there were a few days where we decided to have something simpler from the freezer rather than reaching for the takeaway which is always a winner as it uses up some of the bits we have in the freezer and also saves money too. I have to say though, adding wholegrain mustard to mash is a game-changer, it made a nice alternative to mash with our pork chops.
I am hoping to be productive this week on the blog so it means longer days around work, when I do this I always try to go for simple meals that require minimal effort to prepare or are quick to cook, simply to save time and effort. Recently I have been struggling for motivation on meal ideas, some weeks I am on it and other weeks I feel a little stuck in the rut. It doesn’t help with a fussy family as it feels like a constant battle to get meals that everyone will enjoy.
For now, though, let’s get back to this week’s meal plan and see what we have on the menu.
Our weekly meal plan – 14/03/22
Monday –
Fry up – We have some mushrooms going past their best along with some cherry tomatoes so this is the best way to use these ingredients up! I am sure there are other dishes that take them too but this is the one meal I know everyone will clear their plates for as they can pick and choose what they are having.
Tuesday –
Chilli Con Carne – I plan to pack this dish out with beans and pulses and make it go as far as I can. It is a great meal to batch cook to use up some tinned items that are relatively cheap.
Wednesday –
Chicken noodles – Not sure how I am going to make these yet but I will work that out later in the week, it will be some sort of Chinese style
Thursday –
Freezer meals – Time to use up those half-opened boxes of burgers or the odds and sods of the chips leftover. Nothing fancy but good home-cooked meals to enjoy.
Friday –
Takeaway – I suspect by this point we may be enjoying our takeaway after a long week!
Saturday –
Peri-peri chicken wraps- Our local Nando is no longer delivers so will be recreating our own at home. At least we will save a small fortune on the meal.
Sunday –
Pie and potatoes – I am not sure what flavour pie I will make yet but I am looking forward to a delicious pie and may even make a crumble for pudding.
Simple meals with minimal effort, the longer meal on here to cook is the chicken pie but that will be done at the weekend anyway so I will have lots of time to get cooking. I’m also looking at going dairy-free again, my gut issues are not improving and I am thinking by switching dairy out there may be the chance that it helps to alleviate some of the issues I am having. I don’t find it too bad unless it comes to things such as making cakes etc and normal butter is far more reasonable in price!
