Our weekly meal plan – 21st March 2022

Good morning and welcome back to another weekly meal plan.

Last week’s meal plan did not go to plan at all, covid has hit the household and it resulted in freezer food to get through the end of the week! Thankfully we are not extremely poorly but just feeling pretty rough so we are just taking it easy with dinners and seeing how we feel going through the week. With the shopping this week I have stocked up on simple things like pizzas and frozen battered fish, just to make the dinner times quick and simple.

Then, when we are feeling a bit better, we will go back to making the meals that we all enjoy and are quick and easy to make. As spring is here, I don’t mind being in the kitchen after work as the sun is up and it doesn’t feel like the day has just disappeared, does anyone else feel like this? I need to start getting a little more organised for summer meals though,  when it gets hot we tend to revert to easy dinners as most of the time no one is in the mood for a big hearty meal but I always stick with the same things. Hopefully this year with our George Forman we will have a few more grilled dishes or at least grilled chicken with our salad.

I am getting ahead of myself though, the summer days like that are still some way off! For now, though, let’s get back to this week’s meal plan and see what we have planned for this week.

Our weekly meal plan – 21/03/22

Monday –

Chicken kievs and waffles – Super simple dinner but I love these chicken kievs from Tesco, they have the right balance of garlic butter to chicken. Served with waffles for an easy meal.

Tuesday –

Honey and mustard chicken and rice – This is just an equal mix of honey and wholegrain mustard spread over the chicken and baked. It is quick but delicious and when cooked right it keeps the chicken nice and moist too.

Wednesday –

Fish and chips – Nice and easy again, frozen battered fish and chips. All served with a good helping of peas and ketchup.

Thursday –

Chilli con Carne – Easy dinner here as this is already in the freezer ready to go.

Friday –

Takeaway – Planning a lazy end to the week.

Saturday –

Tacos – The kids love these as they can create their own and I tend to buy both the soft and crunchy taco boats, this way they can pick what they like.

Sunday –

Takeaway – I know, 2 in a few days but it is Mother’s Day and I have no intention of cooking!

It really is a lazy week for us this week when it comes to meals but sometimes that is just the way of life. I am hoping that as time goes on and we return to a bit more of normal life, things will return to normal with our mealtimes. I don’t plan for us to live on freezer food forever but whilst I am getting over Covid, there is nothing wrong with it. The kids on the other hand think its great as they are getting pizza and burgers where they don’t like some of the bits I have picked!

With Easter break just around the corner, we are planning to get back into the kitchen all being well and get some baking done, first on Kayleigh’s list is muffins and these no added sugar muffins with banana and blueberry are right up her street! I’m thinking it is also time for a cheesecake too as it has been a while. What is your favourite thing to make with the kids?
