Good afternoon and welcome back to a slightly later than usual meal plan after an unplanned week off!
Work and life just got very busy and add into the mix post covid recovery, I decided to take an unplanned break from the blog and just not put any pressure or expectations on myself. Which was great as some nights I was in bed by 7! I didn’t really meal plan either, we ended up just using up the bits and pieces we had in our freezer and cupboard to get through the week with minimal effort.
We are back on the meal planning this week and although we have an easy week lined up I am planning on making a list of all the meals we can cook and enjoy, so from next week we can have a bit more of a variety in our meal plans. I have found that we have been sticking to those easy meals that I know everyone will eat and after a while, it gets a little boring, so in a bid to revamp our meals I going to try and get them all down on paper.
One thing that has also had an impact on our meal planning is the cost of food, it has jumped massively in the last few months and with a family of 4 eating plus household bits needed, I am lucky if we can keep it under £80 a week. We brand shift etc and make the most of deals or the items in our freezer yet it is still pretty expensive. Are you feeling the pinch? This is some of the reason we stick to what we know as I can bulk these meals out a bit.
Anyway, for now, let’s get back on with the meal planning.
Our weekly meal plan – 04/04/22
Monday –
Chicken Rogan with homemade naan bread and rice – You can’t beat a good curry and tonight I am planning to make my favourite one, it is so easy to make and tastes delicious. I’ve only ever made the naan bread ones before so hoping it all comes out ok!
Tuesday –
Tuna pasta bake – This is an easy one using Coleman’s mix. The kids love it and we always end up with full happy bellies, can’t ask more than that.
Wednesday –
Pork chops with roasted new potatoes and asparagus – I have some pork to use up in the freezer so I am keeping it super simple. I love asparagus however it is so expensive, I tend to only buy it when it is on offer a the supermarket.
Thursday –
Full English – I have some bits to use up so planning to create a full English for dinner, the kids love this as they can put their order in for the bits that they like!
Friday –
Freezer food – We have some bits to still use up in the freezer so plan to create a dinner from that.
Saturday –
Chicken noodles – I plan to create a dinner inspired by Chinese noodles, I just need to find the right recipe for it.
Sunday –
Cottage pie and vegetables – It has been a while since I made cottage pies but I am looking forward to this. It will also leave us enough for another meal the following week.
Nothing fancy on the menu this week but it will use up some more of the ingredients that we have in the house. I will start to plan some meals going forward based on our favourite dishes and hopefully, we will be trying out a few new or rehashed meals next week. I love the sound of these sweet potato nachos, they sound delicious and it shows that it just takes a little thinking outside the box to come up with a delicious meal with minimal fuss!
