Our weekly meal plan – 16/01/23

We are back with another weekly meal plan and we seem to have hit a stride when it comes to our meals at the minute.

With budgets being tight all around, I am trying to make sure that we are sticking to our meal plans and not wasting food that we already have. This weekend I made my vegetable soup in our soup maker, usually, I stick to potato and leek but this time I decided to use up the bits we had in the fridge. It had everything in it from carrots to courgettes and mushrooms, none of which mattered as it was delicious! It will be something I will continue to do going forward as we always tend to end up with the odd vegetables lying around.

This week’s meals are a combination of family favourites and a few new dishes. We brought a JD Seasoning pack a while ago and have not gotten through them all yet so I am trying to use them up rather than wasting what we have. The spaghetti meatball one was delicious last week and I would most definitely have that one again.

Kayleigh and I are also experimenting with making our own fudge flavours, so far we have had mixed outcomes to these and how well they have worked but I am looking forward to sharing them on our food blog when they come out right!

Monday –

Tacos – This was moved from the weekend when we switched it in for freezer food.

Tuesday –

Chicken, mushroom and asparagus risotto – When I get a chance to get decent pictures, I will share this recipe too, it is so easy yet delicious.

Wednesday –

Tuna pasta bake – It is back!

Thursday –

Sweet and sour pork – This is a Slimming World recipe and I am looking forward to trying it out as it looks delicious in the book.

Friday –

Chinese Curry – Another one from our JD Seasoning box that we brought, I can’t remember the last time I tried Chinese Curry, if ever! Can’t wait to see how this one turns out.

Saturday –

KFC Zinger Burger Fakeaway & wedges – Looking for something to give us all a treat, can’t wait to see how this turns out.

Sunday –

Roast or toad in the hole – I am going to maybe have something a little different this week but we shall see what I can get with the shopping this week.

I am looking forward to our week of meals and there are some tasty ones on there. 3 of the meals are new but we have similar things in the past so I am hoping that they go down well. The plan for Saturday’s meal is to allow us to have a treat whilst eating a little healthier.

We are still not using our slow cooker as much as we can but I am going to keep pushing on that one, simply to make my life easier in the evenings when we get in. For now, though, we are sticking with fast easy meals to make the most of what we have in the house and using up some of the spice mixes. You never know, we may get some new family favourites from these!
