Our weekly meal plan – 13th February 2023

We are finally back with another meal plan after going MIA recently.

Life has just got a little busy and unfortunately, it just means that something has to give and for me, it always ends up being the blogs. It is however half term here and we are hoping to get back on track, rest up and get some little jobs out of the way that we have been putting off. It is funny; everyone always asks what our plans are during the half term and mostly they are mostly just life admin and playing catch up on things we don’t get done during the term. There are just never enough hours!

I am also hoping to spend a little time in the kitchen with the kids this week and do a little baking, it has been a while since we did any so I am hoping we can unwind a little with some lovely sweet treats.

Our meal planning lately has been a little shocking and we have not really stuck to them that well. This just means we either eat odd bits out of the freezer or worse, then order in a takeaway which is really not helpful on the budget. We need to get better at our meal plans and I am going to spend this week just doing a quick stock check on what we have so we can use up some of those bits.

Our weekly meal plan – 13/02/23

Monday –

Chicken kebabs – Homemade kebabs with chips.We tried out this kebab mix from Coleman’s last week and it was delicious. The chicken stayed moist and we had it served with salad and sweet potatoes. I am looking forward to this today.

Tuesday –

Freezer food – We are heading bowling at lunch and I have booked a meal deal whilst we are there, as I am unsure how much we will be eating, I am playing it safe with freezer food today depending on how hungry people are.

Wednesday –

Korean pork and rice – This is a Slimming World recipe that I have not had in a while. It is so easy to make but delicious too.

Thursday –

Gammon, egg and chips – I am going to pressure cook the gammon, then serve it with eggs and chips. This will then leave some leftover gammon for lunch for a few days too.

Friday –

Cottage pies – I never did get around to making these last week so planning an end-of-week treat.

Saturday –

KFC Zinger Burger Fakeaway & wedges – Ok, it is time to try this out again. Last time it was on the menu I never made them, simply as I was struggling to get the ingredients but we can try again!

Sunday –

Toad in the hole – I am going to make mini ones this time I think, just to make them easier. Using a 12-hole cake tin, I will make them exactly the same, just as a smaller version.

We may move some of the meals around depending on how we are feeling during the week but I am hoping to stick to this week’s meal plan as much as possible. It is all about making life easier going forward for us all and also giving us some delicious meals to enjoy.

I am also going to try and recreate some of our favourite meals at home, for example, Kayleigh loved the chicken ramen when we were out for lunch on a shopping trip, so I am going to do a little research and see if it can be recreated easily at home. I will let you know how that goes!
