We are back with another meal plan and our last of July (just!).
Week 2 of the school holidays is here and we have 1 box left of free Hello Fresh box to use this week, so that is 4 meals that I don’t really need to think about. There was a mixed review from the box last week, to be fair, the fussy child was the only one that complained. I suspect that this week will be the same too if I am honest, but we shall see. The sloppy joes recipe was amazing and something that I would never have thought to make before, but I will be making this one again in future.
Personally, I quite like the boxes as it gives us a chance to try out new recipes that we may not have tried before. However, they are pretty pricey! I have a few codes for free boxes (I think it is for 2 people but it is great for lunches maybe?) if you would like one, pop me a comment or email and I will send it over to you.
This week once we get these meals out of the way, I need to start looking at options going forward for our meal plans as I want to try and give a little more variety to our menu but I also need to take into account the ingredients going into these.
With the rising costs, I was planning to rotate between slightly cheaper meals and more expensive ones so we can keep the costs down where we can. I have also been working on some sweet recipes lately too, so we can have a little treat. If you have a slow cooker, you have to try this slow cooker kinder fudge recipe, it is amazing.
Anyway, let’s get back to this week’s meal plan and see what we have cooking.
Our weekly meal plan – 31/07/23
Monday –
Cajun chicken and tomato pasta – This dish should be fine, though I am not a fan of thigh meat and I didn’t switch it out this time. I will eat it though, as I hate food waste.
Tuesday –
Cheeseburger loaded fries – I have seen lots of loaded fries recipes lately and they all look great. We have done loaded fries once before and they went down ok, so I am hopeful that this recipe will be good.
Wednesday –
Chicken in a creamy peppercorn sauce – Hopefully this one will be popular and looking at the recipe I can’t see it not going down well, other than the fact the kids don’t like mash….
Thursday –
BBQ Beef quesadillas – I picked these thinking they would be popular but so far the menu choices have been met with funny looks. Yet, we continue to push on and hope they will just eat it!
Friday –
Nando’s Fakeaway – There will be chips, chicken, spice and halloumi. Can’t really go wrong with this.
Saturday –
Pizza and movie night – I am thinking pizza and garlic bread, though I may do a side of chicken just like we get with a takeaway.
Sunday –
Tuna pasta bake- Easy end to the weekend. This is the one dish that there tends to be no complaints, so hoping it stays that way.
This week I plan to take a little time to get an idea of all the meals we can eat as a family and those that can be adapted for fussy eaters. Then I can use this going forward to create meal plans for the coming weeks, where hopefully, the fussy children will eat with minimal complaints!
