Our weekly meal plan – 05/07/21

It is that time again, we are heading back into another weekly meal plan and our first one for July.

This week we are trying to use up the bits in the freezer and run it down before we plan a bit of a batch cook of family favourites in the coming week. I don’t know about anyone else, however, we always seem to end up with random bits in the freezer such as 3 fish fingers and Gregg’s pastry. No idea how we end up with odds of everything but every now and then we just need to use up the bits we have lying around.

We only have 2 weeks left of work and the summer term. The summer holidays can not come around soon enough! It feels like a long slog at this time of the year, with transitions and general tiredness kicking in, there is just so much going on behind closed doors that sometimes I do question my choice of jobs. At least though I will be at home for a nice period, even if I am due to work through the holidays at points.

Both Daddy Vs Work and I are back on Slimming World this week, the plan is just to get back to basics. Good home-cooked meals with a little bit more consideration for the junk we are eating. We were doing so well, then fell off the plan a little.

Here is what we have planned for this week.

Our weekly meal plan – 05/07/21

Monday –

Smoked haddock with new potatoes and green beans – Super simple but delicious.

Tuesday –

Lentil boats – This is a leftover lentil mixture that was made a while ago, I may cook some sweet potatoes with this to add another flavour.

Wednesday –

Sausage, egg and chips – Love this meal, I know there is not much to it but sometimes the simple things are the best.

Thursday –

Chilli con Carne – Using up a leftover portion again.

Friday –

Takeaway – We may try and do a fakeaway but I will see how the week goes.

Saturday –

Freezer food – Whatever is left in the freeze can be used up!

Sunday –

Roast or BBQ – Depending on what the weather is doing towards the end of the week, we may crack the BBQ back out or it will be a roast.

Nothing very exciting planned for our week, however, I am looking forward to running down the freezer a little so we can start to plan in advance and get the freezer stocked going forward. It is so much easier when you are busy with work to just download a portion of food ready for the evening rather than having to cook from scratch. It also means you know exactly what is being put into each meal, which is perfect when you are back to eating a little healthier.
