Good evening and welcome back to a slightly later-than-usual meal plan.
The weekend was spent catching up and getting myself organised, however, it did mean that the blog was put on the back burner whilst I did. I am finding the whole dark mornings and darker evenings a little bit harder to motivate myself at the minute. All I want to do is eat comfort food and get comfy under a blanket, especially as I am refusing to put the heating on yet.
There is one blessing to the winter rolling in though, it is time for those recipes that bring comfort and warmth after a long hard day at work. We have also cracked the slow cooker out a bit more lately which is great. Yesterday I cooked the most amazing slow-cooked lamb shanks with roast potatoes and they were delicious. These came from Swaledale, an online butcher that has kindly sent us some of their products to try out so I will let you know how we get on.
This week is a busy one with lots going on between appointments, work meetings and kids’ clubs. I just don’t know why it has got so busy all of a sudden! We will just keep ploughing on though as we only have 2 weeks left of the term to get through and then we can take a well-deserved break for a week. It will be a busy start for us to the half term and then we plan to take a few days out to just chill out and relax, taking time to recharge before we go into the busiest time of the year. I also need to crack on with our Christmas features that we have coming up too.
Anyway, let’s get back to the food.
Our weekly meal plan – 10/10/22
Monday –
Chicken in black bean sauce and egg fried rice – Nothing fancy but quickly making this. I am using up a sauce mix for the chicken but making the rest.
Tuesday –
Beef stew in the slow cooker – This will be using the diced beef from Swaledale, if it comes out as the lamb shanks did, I will not be disappointed at all. Can’t wait to get home to the smell of this cooking.
Wednesday –
Tuna pasta bake – One for the kids as they love this every time it gets made.
Thursday –
Spaghetti bolognese – I have a portion in the freezer ready to go with this so it will be a quick dinner tonight.
Friday –
Sausage, mash and beans – It has been a while but looking forward to this.
Saturday –
Taco’s – These were on the menu in the past but never made it to the table, lets’s try this one again.
Sunday –
Roast – It has been a while since we had a roast dinner so I plan to go full-on with all the trimmings. I am not sure what type of roast yet, it will depend on the options in the supermarket.
I am looking forward to this week’s meal plan, it has something for everyone whilst hitting the right comfort level! It is all about easy cooking and warming meals to get through the dark damp nights. I think next week I will be looking to add some meals such as jacket potatoes and pasta dishes, just to break up the costs a little but lots of the items above are already in the freezer so we saved a little cash there.
