I can’t believe it is Monday and time for another meal plan already! Last week was stressful, however, it flew by and now we are back into a swing of homeschooling/working I am hoping it goes a little smoother from now on.
During this lockdown, I have decided we are going to just roll with it when it comes to our dinners. Should we decide that we are not in the mood to make something from scratch, there are options to fall back on in the freezer. Too much pressure is being piled on currently with the expectations of carrying on as normal when things are anything but normal!
With my IBS and intolerance flair up, this week I am going to try and cut dairy out of my diet as much as possible too, just to give my gut a rest. Here is what we have cooking this week:
Our meal plan – 11/01/21
Monday –
Chilli con Carne – I didn’t cook this on Saturday, so simply moved it over.
Tuesday –
Lamb curry – I am going to probably make a Rogan as I have some to peppers etc to use up.
Wednesday –
Sausage, egg and chips – Super simple but so yummy.
Thursday –
Peri-peri chicken and rice – I love the frozen Peri-peri chicken, especially as required little effort from me.
Friday –
Takeaway – Back to our Friday cooking free night, I’ll need it after this week.
Saturday –
Pork chops – Not sure what we will have with these but the kids love pork chops!
Sunday –
Beef stew – I can’t wait to make a hearty stew and dumplings.
All in all, it sounds like a delicious week of meals and I can’t wait to get stuck in. I’m sure there will be a few battles along the way with the kids but here is to hoping the kids will start to like more than their few favourites!
