Good morning and welcome back to another weekly meal plan. For the first time in a long time, I actually got myself organised over the weekend and got this post prepared and ready to go. I don’t know about anyone else but I am really struggling to get any motivation over the last few weeks.
The first few weeks in lockdown I was baking, our house was shiny, the blog was scheduled and we were eating home-cooked meals every day. Now I just lack the motivation to do it. I’m not sure if it’s because we are in the limbo stage now, unsure of whether we are going back to school or not. I never thought I would say this but roll on the summer holidays! I can’t wait to have some time to do things we would like to do, without the guilt of thinking we should be working on school bits.
Our meal plan – 11/05/20
Spaghetti bolognaise – It’s already made, just got to heat it up.
Chicken curry – Yum yum! I will be using our rogan josh recipe but just adjusting it slightly.
Mince and vegetable pie – I am going to give this a go and see how it turns out. Basically I am making it up as I go along!
Peri-peri chicken and rice – Simple but hopefully a crowd-pleaser.
Cottage pie – Not sure if they will eat this, but we are going to give it a go!
Chilli con Carne – Easy and simple to make.
Roast or stew – This will all be dependant on what I can get with shopping this week, Katy over at Katy Kicker has a yummy looking slow cooker roast beef recipe which I may try out, I’ve done chicken in the slow cooker but never beef so I’d be interested to see how this turns out.
I am still on the lookout for family meals that everyone can eat, living with an extremely fussy eater is not easy at all!
