Welcome back for another weekly meal plan after a pretty warm weekend. I don’t want to sound like a typical Brit and complain about the weather but I am not built for hot sweaty evenings at all!
Anyway, the weather has changed this week, just in time for my birthday as usual. I would like to apologise to those local to me as it always rains on my birthday and this week looks like it is going to be no different.
The meal planning has been all over the place lately whilst we have been working on our garden but we have now finished so I am going to try and get us back on track before we head back to work and school. This week’s meal plan will be a bit of a mismatch as we use up the odd bits that we have but also try and work out just what we have! The shopping has been a bit last minute lately so I tend to have odds and sods that I can’t really remember what I ordered them for.
How are you finding the increase in food costs, I am starting to see a pinch on our budget at the minute with most weekly shops over £100 when you add in cleaning products and toiletries, it really is starting to rise.
Our weekly meal plan – 15/08/22
Monday –
Chicken Kiev’s, chips and beans – Easy meal to start us off this week as I am unsure as to what the plans are today.
Tuesday –
Pancakes – Not for me as I am not a fan of them but the kids have requested them and as it will have cooled down by then I don’t mind getting in the kitchen and cooking them.
Wednesday –
Korean pork and rice – I never made this last week so going to do it tonight, it literally takes about 5 minutes to prepare and then I just need to cook it which is another 10 minutes or so when you include the rice!
Thursday –
Penne arrabbiata – It is a Slimming World recipe that I use and it is so delicious, always gives us leftovers for the next day too. Packing it full of veggies makes it not only good for you but also cheaper than using meat at the minute.
Friday –
Takeaway – Birthday takeaway, it has to be done!
Saturday –
Chicken burgers and chips – Not too exciting but it lets people make it how they like it. So Ethan will go for straightforward mayo with his when I suspect Kayleigh will go for Nando’s chilli jam!
Sunday –
Meatballs and pasta – I am going to make our own meatballs using up some pork mince that I have in the freezer and then make a sauce to go alongside it. I may even get the kids involved in getting this done tonight.
This week will be a bit of a battle to get back into better habits and routines after a few weeks of not really sticking to any. I am going to try and get the kids more involved too in the meals, this is not only to help me out but to encourage them to try out new meals but also that they may appreciate the effort that goes into meal times before they turn their nose up to it!
