It is time, for yet another meal plan as we fly through the month again. I am just trying to keep up with life at the minute as it seems as though everything is just flying by and before we know it, we will be enjoying Christmas and I am not ready at all!
We stuck mostly to the meal plan last week and the vegetable tagine that I came up with was delicious, even better the next day when you have it as a leftover for lunch. Keep an eye on our food blog, The Family Cookbook as I will be sharing the recipe up there soon.
This week we are going back to basics and easy meals as I have a 3-day audit starting on Tuesday and I know it is going to be long days coming up, so I just want to make life that little bit easier this week. That doesn’t mean the meals are going to be cheat meals, just ones we already know so I can make them with minimal fuss or effort! I am loving our slow cooker though, it is helping on days when I don’t want to be standing at the cooker all day, mostly I use it at the weekend but I am going to start incorporating it into our weekday meals too.
Anyway, let’s get back to this week’s meal plan.
Our weekly meal plan – 12/09/22
Monday –
Chicken wraps – Again, super easy and delicious. I will see what type of wraps we are in the mood for tomorrow before I cooked them but it will either be fajita or Nando-inspired.
Tuesday –
Korean pork and rice – This is a dish that has minimal ingredients, is super quick to make and tastes delicious.
Wednesday –
Spaghetti bolognese – I already have some of this in the freezer so it will be just a case of warming through and cooking some fresh spaghetti.
Thursday –
Freezer food – It will be a late one tonight due to open evening so I am just going to stick some bits in the freezer when I get in.
Friday –
Sausage, egg, chips and beans – Simple end to the week with this one. Not sure you can beat dipping chips into a runny egg?
Saturday –
Pizza – I may attempt to make homemade pizzas, if not we shall just see what is on offer with the shopping.
Sunday –
Slow cooker chicken casserole – I had to move some meals around last week due to work we were doing on the house so I am going to give this one a go this week and see how it turns out.
I have been using more of our slow cooker already and I am really enjoying trying out some different dishes. It is a little hard as I worry when I leave it cooking during the day and it is a new recipe as I don’t know how it is going to turn out or if it may dry out but we are getting there, so far there are 2 new dishes coming out of the newly tried recipes that we will have again. Over the coming weeks, I am also going to try and make our own flatbreads and naan bread etc, they just taste so much better when you have made them yourself compared to the shop-brought alternatives.
