Welcome back to another meal plan and our last one before the new school year starts! Where have the past 5 weeks gone? They seem to have flown by.
This week we are getting ready for the return to school and plan to stick to our favourite meals to have one less stress to worry about. We have learnt to cook some new recipes during the summer and I am very grateful the weather has chilled a little. It was a struggle to get people to eat when it was so hot at the beginning of the summer.
Plus Autumn is my favourite season, hearty food comes back in, my favourite scents come out in the wax warmer and it means Christmas is only round the corner!
Here is what we are cooking this week:
Monday –
Chilli con Carne – I plan to make a big pot of this, some to freeze for other days and the rest to go in burritos later in the week.
Tuesday –
Lemon chicken with Mediterranean vegetables – Delicious but so simple to make.
Wednesday –
Chilli burritos – Using up the chilli mix from earlier in the week this is an easy dinner.
Thursday –
Tuna pasta bake – Family favourite so a no-brainer really.
Friday –
Sausage, mash and beans – It feels like a long time since we had something so simple but tasty!
Saturday –
Fishcakes & waffles – Easy freezer food for us tonight.
Sunday –
Roast dinner with trimmings – The last day off before I head back to work so I plan to make sure we all have a yummy meal to enjoy.
