Good morning and welcome back to our last meal plan of the month! It is scary to think that December and Christmas are now just around the corner, this year has passed by so quickly. I can’t remember a year ever passing by as quickly as this one has done!
The last week was pretty much a write-off as I started it poorly and ended up not being able to hear at all in one ear due to an ear infection. It also pretty much wiped my week and we just got by the best we could, which meant the meal plan went out of the window. This week I am going to try and get us back on track where I can but I am still not 100%.
It has turned colder here now and I plan to stick to comfort foods for the rest of the year! Our slow cooker is making more appearances, maybe not quite as many as I would like but it is getting better and hopefully will continue to do so. The slow-cooker beef goulash was delicious last week!
This week I am planning to use up the bits that we have in the freezer where possible. I have lots of odds and sods in there that need to be used in the meal plan this week, so expect a couple of “freezer days”.
With that in mind, let’s get back to this week’s meal plan.
Our weekly meal plan – 28/11/22
Monday –
Chilli Burritos – These are one of the easiest meals to make when you have bulk cooked in the past. I freeze up enough Chilli so I am able to make burritos after work with minimal effort! Topped with cheese, sour cream, and jalapenos, it is a winner!
Tuesday –
Chicken kievs and waffles – Super simple dinner tonight to use up 2 boxes in the freezer, they just seem to take up so much space.
Wednesday –
Sausage, egg, chips, and beans – I can’t remember the last time I made this but I am looking forward to it.
Thursday –
Takeaway! – It is Christmas tree time, to celebrate we always have a pizza party on the floor surrounded by decorations and Christmas music playing. It may seem a strange tradition but one we are all looking forward to.
Friday –
Chicken curry, rice, and naan bread – I have some naan bread in the freezer, which surprisingly takes up a load of space! A quick curry with some yummy sides.
Saturday –
Freezer food – Daddy Vs Work is out for a Christmas meal so we will just use up some of the bits still in our freezer.
Sunday –
Roast – You can’t beat a roast when it is chilly outside. I will see what I can pick up with the shopping for the roast, but it will be served with Yorkshire potatoes, veg, and roasties!
Hopefully, after this week, our freezer will be a bit more organised and I will be able to make a few more meals moving forward. Somehow I have ended up with a few portions of beef mince in the freezer and to get away from the usual bolognese and chilli I am thinking of maybe making some meatballs, however, if you have other suggestions for this please pop them in the comments below. It would be great to make something a little different with it!
