It is that time of the week, time for another weekly meal plan and here we are at the end of the summer holiday already.
Although we haven’t done anything in particular, we have also been busy with finishing our garden, appointments such as dentist, eye tests and hairdressers for the kids before they go back to school. The time has just flown by and I’m not sure I am ready to return to work yet! It has been lovely just being able to do things during the day and chill out in the evening and it is a real luxury to have the chance to do that.
Meal planning has been a bit off this last week but I am not really complaining, the time off has been much needed and I have really just gone with the flow. We do however need to get back into the swing of meal planning as we are trying to save some cash in the coming months. Part of this will be using up what we have in our house and running down some of the bits we have in the cupboard and freezer. I tend to buy bits and maybe not use them so we end up with odd tins/packets and bits in the freezer.
We have also discussed trying to mix up the meal plan with a variety of meals that vary in price to try and help with the food budget. With costs rising so much, it may be that we have a mix of easy dishes like egg, chips and beans alongside a curry the same week which is more expensive due to the rising costs of meat. I am also planning to bulk cook when our freezer is a little more empty and put portions of meals in the freezer ready to help in the week with dinners. I am also going to crack out the slow cooker too, not only to help with dinners but the costs of electricity too!
Anyway, let’s get back to this week’s food.
Our weekly meal plan – 29/08/22
Monday –
BBQ – We have friends over so planning a BBQ on our new decking. It will be the basics such as burgers, sausages and chicken. Alongside some easy potatoes and salad, yummy!
Tuesday –
Cod, new potatoes and vegetables – So simple but delicious. It is all about using up some of the bits we have in the freezer too.
Wednesday –
Spaghetti bolognese – I plan to batch cook this so it can be frozen. Using mushrooms and carrots, alongside the tomatoes that need using up I am going to make as big a portion as I can.
Thursday –
Chicken curry – I am undecided as to whether I will pop it in the slow cooker or make it in the evening but I will see how I feel.
Friday –
Meatballs and pasta – I have a portion of pork mince in the freezer that I brought for another recipe, so with this, I am going to make our own meatballs and pasta.
Saturday –
Tuna pasta bake – The kid’s favourite.
Sunday –
Chicken wraps and sweet potato bites – I am undecided as to whether I am going to do Peri Peri wraps of fajitas yet, it will be down to what we have in the house to use up at this point as fajitas are a great way to use up those peppers and onions!
This week to me is a delicious week of food and once I get to the end of the week we will know a little more as to what we have left in the house and then start using up the last of the bits. I am going to be doing a little research for our food blog this week for the best budget meals and I will be featuring these in the upcoming meal plans to help save a little money.
