Good morning and welcome back to another meal plan.
The half term flew by in the blink of an eye and here we are again, gearing up for a 7-week term! At least at the end of this, we will have Christmas to look forward to. We had a lovely half-term week, with lots of food, family time and catching up on life really. It was nice to take a slower approach to life after a busy time in the summer.
We didn’t get around to baking in the end as we ended up going to Costco and buying treats there, so it seemed pointless making more.
I did a top-up shop at Costco for the main items we need such as cleaning products and meats for the freezer, however, I noticed in there that the costs have gone up too. We are feeling the pinch everywhere at the minute!
This week I am going for easy meals as we look to just survive the first week back which is likely to be really busy but we have a fun weekend to look forward to. Ever since the kids were little, we promised them when we sorted the garden out we would have our own fireworks and this week is the week! So, it will be s’mores cooked on the BBQ and hotdogs/burgers whilst we enjoy our fireworks.
Anyway, let’s get back to what we have cooking this week.
Our weekly meal plan – 31/10/22
Monday –
Spaghetti bolognese – Using up the last of the freezer portion that we have. Simple and no hard work after our first day back.
Tuesday –
Tuna pasta bake – This will keep the kids happy after school. Simple to make too so I don’t need to think too much or spend too long in the kitchen!
Wednesday –
Slow cooker beef stew – It makes me hungry just thinking about this one already, last time I made it, it was almost like a hug in a bowl. Delicious!
Thursday –
Chicken and chorizo ragu on jacket potato – This is a new recipe I am trying out and I am just hoping it comes out ok! It sounds good on paper.
Friday –
Freezer food – Using up the odds and sods in the freezer, is simple but a great way to make the most of the bits you might have..
Saturday –
Hotdogs/burgers – Firework night in our household!
Sunday –
Casserole or stew – I am not sure what I am going to do yet, I will wait till later in the week and see what we have left and work it out from there.
Although I am not a fan of the dark mornings and early darkness in the evening, I do love this time of the year for comfort food. To save me time and also save on our gas/electricity, I am going to try and cook a few meals a week in the slow cooker. Hopefully, we will find some new family favourites that will mean I feel like I get a night off when I get in too as dinner will be ready for me too.
