Our Weekly Meal Plan – 3rd February 2025

It is finally February after what feels like the longest month ever and we are back with yet another meal plan.

I had great plans last week to share some bits going on but time just ran away from me really but this week I plan to try and get myself a little more organised and back on track.

Meal plan wise last week was not bad, though we didn’t stick to the plan every day. I did however make the chicken Katsu curry and it was delicious, definitely one for the menu again in the future. The chicken tenders were not quite a success, the batter fell off the chicken in the air fryer, so that one is something I need to give another go but tweak the recipe a little. The pizza dough was another disaster, but we are going again today and I will let you know how it works out.

This week we are sticking with some family favourites and quick meals that I know everyone will enjoy. After a busy week last week, I just want to get myself back on track with things and the best way to do this is to make life as simple as I can when I can, especially when it comes to food.

Our weekly meal plan – 03/02/25

Monday –

Homemade pizza – The recipe I used last week was a disaster, so I am trying out a new recipe today, I will let you know how it goes.

Tuesday –

Nando’s Fakeaway – I used the Nando’s sauce but made it at home for a fraction of the price. Everyone can make their wraps however they like, which is why it is always popular.

Wednesday –

Tuna pasta bake – Family favourite and clean plates all around!

Thursday –

Burgers & chips – Another one that is popular as everyone puts in their request when I am doing these. All will be served with freshly made rolls and a selection of sides and sauces.

Friday –

Curry night – I would like to try and find another curry recipe to try out as there have been a few I have tried in the past that have not quite been as nice as the takeaway version.

Saturday –

Creamy Rigatoni with Garlicky Greens and Creme Fraiche – This Hello Fresh recipe is delicious and simple to do, so looking forward to it as a weekend treat.

Sunday –

Pie & mash – Something a little different from the usual roast or casserole. I don’t really know what I really fancy at the moment so it may turn into a cottage pie and veg but we will see

This week we have a little more time, so I want to work on a list of recipes that we can pick from week in and week out. I am hopeful then that we will be able to not have the same dishes every week, keeping the variety there a little more than it currently is. At the moment, though, it is not that important as long as we all get a good meal!
