Here we are, our first meal plan of December as the end of the year rolls in really quickly.
It is hard to think that we only have 3 meal plans left after this one before the year ends. There has been a mixture of approaches to our meal plans this year, but so far I have not found any that are the perfect match for us life always throws a curve ball when you think you have it nailed down anyway, so I have learned to just deal with it. Before the end of the year, I am going to run through our meal plans and work out which meals have been a hit and which ones have not. From there, I will have our own list of meals that I know we can create meal plans from before we start to add more to the mix.
I am hoping that as Ethan is getting a bit older, he may start to be a little less fussy when it comes to dinners. Some days I have the battles and other days I really do not have the energy to even try and argue, have you argued with a stubborn 12-year-old when you are tired, trust me it is not worth the effort! At least he will eat most vegetables and fruit, so there are no concerns there.
This week we are going to be using up some of the bits we have and creating some new meals from them. I am unsure as to how they will go down but we can at least give them a try and hopefully they will be another winner!

Our weekly meal plan – 05/12/22
Monday –
Homemade chicken kebabs and chips – I brought a mix for this, I am hoping it will be delicious as it sounds really easy to make and quick too.
Tuesday –
Tuna pasta bake – The kid’s favourite is back on the menu, no fuss or real effort for this one.
Wednesday –
Tacos – Another one that goes down really well with everyone as they can create their own. I always buy crunchy tacos for the kids and soft mini tortillas. Alongside salsa, cheese, salad, and jalapenos, it lets everyone get creative and nothing is ever left!
Thursday –
Lamb Merguez Sausages and sweet potato wedges – We have these sausages from when we worked with Swaledale Butchers but I have not used them yet, I was planning on having them this week with sweet potato wedges and salad.
Friday –
Spaghetti bolognese – I have 1 portion left in the freezer to use up so this is the perfect way to end the week.
Saturday –
Pizza night – I am going to cheat and just get some frozen pizzas and garlic bread in for an easy dinner tonight.
Sunday –
Roast or stew – I am unsure as to what we will have yet but I will see what we fancy towards the end of the week and work backward.
I am hoping to run down some of the freezer this week and then create space for the bits over Christmas. I try to avoid the shops where I can in the run-up to Christmas, so where possible I grab bits now and freeze them ready to use over that lull in Christmas. It is also great for freezing bulk-cooked meals over Christmas ready for the new year when I always find it hard to get going!
