Good morning and welcome back to this weeks meal plan.
I hope your first week back into a more normal routine went well and if you have children, they enjoyed being back at school. Last week was tiring and our meal plan did not go to plan, some days we went for easy freezer food as I just could not be bothered to cook.
This week though we are trying to get back into a better routine and I am going to try and cook fresh food every day, with some healthy options thrown in! I don’t know about anyone else but the pounds have been creeping on during this lockdown. Now, I’m not going to be crash dieting but I am hoping to get a little healthier with my options and stop being so lazy. During the next few weeks, I’m going to start following Slimming World again, though I am not signing up currently so I will be doing it all from home.
Now, to this weeks meal plan:
Our meal plan – 15/03/21
Monday –
Burger and chips – We use the Tesco fresh quarter pounders and wholemeal rolls, then everyone can add the sides they like.
Tuesday –
Chicken and ratatouille – It’s been a while since I’ve made this but this Jamie Oliver recipe is delicious. Plus packed full of goodness!
Wednesday –
Smoked haddock and vegetables – We didn’t have this last week, so we are going to have it this week.
Thursday –
Spaghetti bolognaise – I have 1 portion left in the freezer to use, so need to do another batch cook soon.
Friday –
Chicken chow mein – This is from the Pinch of Nom book and it is delicious, takes a little effort but worth it.
Saturday –
Tuna pasta bake – We’ve not had this in a while so it will be delicious.
Sunday –
Cottage pies- I can’t remember the last time we had these.
Our freezer is starting to run low on meals I have batched cooked, so in the coming weeks, I will be making some more. It is easy to do with meals such as bolognaise and Chilli con Carne.
