Another week and another weekly meal plan post already. It is hard to even remember what we did last week, let alone what we ate as it has been so busy. With the end of term fast approaching, the next few weeks are likely to be just as chaotic and the plans for meals will be simple and quick to make sure there is as minimal fuss and effort as possible.
I don’t know about anyone else, however, the heat is making cooking dinner so much more effort. Personally, I don’t like eating heavy meals in the heat, let alone cooking them. Though I don’t really know what I want to eat either so end up dithering over it all the time. Hopefully though, this week we will get that a little more organised. It is also Ethan’s birthday this week and there are plans for a takeaway and doughnuts!
Another thing we need to get back to this week alongside our meal plan is Slimming World. After getting on so well with Slimming World Online, I have fallen off and gone back into old habits. There is always an excuse as to why I can’t do it. That needs to stop and I need to get back into the better habits I had started and was doing so well with.
So, with all of the above in mind, here is what we have on our meal plan this week.
Our weekly meal plan – 14/06/21
Monday –
Healthy fry up – I’m planning to make a healthy fry up after work. Though it is likely to mostly be grilled so not really a fry up!
Tuesday –
Takeaway – Ethan turns 11 today, we don’t have any major plans but he will have a couple of friends round for a gaming evening with MacDonalds and Krispy Kreme (goodbye diet!).
Wednesday –
Spaghetti bolognaise – This is in the freezer, so an easy option for us really.
Thursday –
Jacket potatoes – I will leave the toppings up to everyone else really. As we are short on time I will start these in the microwave then finish in the oven for a crispy skin.
Friday –
Takeaway – Yeah I know, we had one on Tuesday but it is the thing that gets me through until the week knowing I have Friday off cooking!
Saturday –
Chicken fajita with sweet potato wedges – I love fajitas however the wraps are synable and I like to save my syns for treats. To get around this I always go for baked sweet potato wedges instead of the wraps.
Sunday –
Keema curry – I can not remember the last time I cooked this, it is delicious and super speedy to make.
During the week this week, minimal effort is required. Knowing the kids, now the heat is here for a while, all they want to eat is cereal. They are not interested in fussy meals and neither eat salad. We will find a happy compromise between that means everyone gets fed and I know they have eaten something that is good for them.
