We are back with another weekly meal plan and we are fast approaching July, I don’t know where the year is going.
It is only 3 weeks until the end of term and we are going into the busiest period we have at work. Throw into the mix that Kayleigh has 2 dentist appointments this month for her bracers to be fitted and Ethan’s transition to high school. We are going to be crawling into the summer holiday!
As for the meal planning, it’s been awful. We have spent so much money on convenience food and takeaway in the last month. We’ve been working 11 hour days for the last 3 weeks, not including blog work and general home life, the time has just not been on our side, and laziness has crept in. It is not an option to carry on as it is though, we need to look at saving money in the coming weeks and this is the first area to tackle.
I don’t know about anyone else, but when we are short on time, it is always the dinner options that we take the shortcut on. It is almost like autopilot, time is short so we order something in and get on with everything else whilst we wait for it to arrive!
Anyway, let’s get back to this week’s meal plan, and hopefully, it will be one we will stick to.
Our weekly meal plan – 28/06/21
Monday –
Spaghetti Bolognese – We have a portion in our freezer ready to go, so this will be a simple dinner for us.
Tuesday –
Chicken kiev’s – Nice and easy for us, pop it in the oven, and away we go.
Wednesday –
Pasta – I’m not sure what sort I will make, it depends on what we have in the fridge to use up.
Thursday –
Pizza and chips – Another meal from the freezer, I’m trying to clear out the bits and pieces in the freezer, including these pizzas!
Friday –
Fakeaway – Homemade peri chicken wraps, delicious.
Saturday –
Chinese noodles – I’m not sure what sort of noodles we will go for but I’m thinking of a chow mein style meal. This is not as hard as it sounds but tastes amazing.
Sunday –
Cottage pie – It has been a while since I made these but they are so delicious. They are also perfect for storing in the freezer for another night too.
It’s a pretty easy week for us but to be honest, it needs to be. I know we are going to be pushed for time this month and we just need to tackle the meals alongside it. I could go for more home-cooked, from scratch all the time. The simple truth is I just don’t have time or the inclination to do this whilst we are so busy.
For me, it is all about getting that happy medium between saving money whilst eating good meals and saving myself a little sanity in the busiest time of the year.
