Good morning and welcome back to this weeks meal plan.
I have to say, being off work and having time to cook has been great, though it has been a tad warm at points which have made it a little more difficult when it comes to mealtimes. I just do not want to stand in a hot kitchen whilst the sun is beaming in, it is warm enough as it is!
We have been trying out some new dishes and they have been received ok, for the most part. I know that we are not going to have hit all the time but it is nice to be breaking away from our regular dishes. Hopefully, over time there will be a few more winners and we will have a bit more of a choice for our weekly meals. One thing that was really popular was the pick and mix style dinner, it just let the kids pick and choose what they had but allowed us to use up some things in the fridge too. So it ended up being an all-around winner that we will have back on the menu this week too.
Here is our meal plan for the week:
Our weekly meal plan – 02/08/21
Monday –
Firecracker chicken – I am looking forward to giving this one a go, it is a new recipe for us but it sounds delicious.
Tuesday –
Spaghetti carbonara – We had this a few weeks ago for the first time and it was a hit, so we are making it again. Last time I cooked it using leftover gammon, this time though I will buy in some pancetta to have in it.
Wednesday –
Chilli con Carne – I like making this so I can bulk out the meal, however, if the kids would prefer, we may have tacos instead. It will be dependant on what I order in for shopping this week.
Thursday –
Mediterranean chicken traybake – This looks yummy, depending on how we feel, I will do this with either rice or new potatoes.
Friday –
Burgers and chips – Easy to make and a crowd-pleaser.
Saturday –
Peri-peri chicken wraps – Homemade Nandos, little effort required but they are always a hit!
Sunday –
Pick and mix – Last week pick and mix dinner was popular so I am going to do the same again this week. It will be dependant on what I order in but it will at least have pickles and fresh bread, yummy!
It is nice to be able to have a bit more of a variety on the menu and with a little more time in the evenings, I don’t mind getting back in the kitchen cooking. Once we have a few favourites, it means that meal planning in the coming weeks should be a bit easier and I will be able to add in a little more variety to our dinners. I am going to start looking at our lunch options next week as we stick to the basics all the time such as sandwiches, fruit and yoghurt but these get a little boring. I’m hoping that I can give us a little more variety on these before we return to school in September.
We all take a packed lunch, so having a little bit more of a choice will help us out massively but also break us away from the boredom of eating the same thing over and over.
