Our weekly meal plan – 11/10/21

Good morning and welcome to this weeks meal plan.

Last week has flown by, it was so busy, I’ve hardly had time to take things in the last few weeks. Thankfully the October half-term is now only a couple of weeks away and I can’t wait. The break is very much needed by us all.

Anyway, let’s get back to this weeks meal plan.

We took delivery of our Hello Fresh box on Saturday, as I mentioned last week, we are giving this a try as it was half price. So we only paid £25 for 4 dinners for 4 people, a bargain really! Last night we had the first dish which was a beef and mushroom pie and it was delicious. The kids, unsurprisingly, were not as keen. However, they are going to have to get on with it as we have 3 more meals to give a go this week. My first impressions though are good and there was lots of food to go round which was great. Now to see what we are cooking this week:

Monday –

Chermoula spiced lamb and rice with homemade tzatziki – This is another one from Hello Fresh, I am sure the kids are not going to be keen on this but I am really looking forward to this dish and seeing how it turns out.

Tuesday –

Burgers and chips – Crowd pleaser to break up the new dishes before the kids completely give up!

Wednesday –

Teriyaki Salmon Poke Style Bowl – This is another one I am looking forward to, it sounds amazing and so simple to make too. I am hoping it is a hit as we do need to eat a bit more fish in our household.

Thursday –

Speedy chicken noodles – Everyone loves noodles so I am hoping this one is also a hit.

Friday –

Chilli Con Carne – Easy one for us as it is already made and in the freezer. Just need to cook it up with some fresh rice.

Saturday –

Scampi and chips – Bringing the fish and chip shop home! I picked up some scampi when it was on offer recently and looking forward to this.

Sunday –

Roast – As per usual, it will be a roast dependant on what I can pick up from the supermarket. It is the one day of the week where I know everyone will clear their plates.

I am unsure how some of the meals will go this week, but from my point of view, it should be a relatively easy week. With the meals from Hello Fresh, they are already individually bagged with the ingredients so I just need to prepare and follow the instructions. I like the concept of the delivery box, just not sure how financially it stacks up for us all the time. However, I can see on busy weeks it would be a big help not having to think about what we are having on those days.

With the half-term coming up, I plan to work on my own “cookbook”. The place where I add all my favourite meals into a binder so it is easy to cook dinner on a weekly basis. It will also serve well for the kids one day when they fly the nest, we can just copy all our favourites for them to take with them on their next adventures!
