Our weekly meal plan – 04/01/21

Welcome to our first meal plan of 2021, here’s to a year that hopefully, we will get some sort of normality back!

After 2 weeks off work and routine, we are back to it this morning and I am sure this week is going to feel long. We spent 2 weeks eating so much food from the full works on Christmas Day to countless buffet-style dinners and cheese/crackers, I am fit to pop.

Although we are going to get back to better eating habits this week, I am also wise enough to know the first few days back at work after a break can be pretty tiring so I am going to make it as easy as I can to save a little stress. I am going to look for a few new recipes to try out this week though and can’t wait to get cooking some new recipes.

With all the junk we have consumed, I have noticed my IBS and dairy intolerance flaring up, it has been my own fault. So, I will be cutting dairy out. I don’t find it too hard to do apart from things like chocolate!

Anyway, let’s get back to this weeks meal plan. Here is what we have cooking at our house this week:

Our meal plan – 04/01/21

Monday –

Spaghetti bolognaise – Using up the last portion in our freezer.

Tuesday –

Vegetable dhansak – Never tried a dhansak curry before so looking forward to trying this.

Wednesday –

Homemade sausage rolls and chips – I have some sausage meat from Christmas to use up so this is perfect.

Thursday –

Keema curry – I can’t remember the last time I made this, it is delicious but pretty simple to make.

Friday –

Takeaway – Back to our Friday cooking free night, I’ll need it after this week.

Saturday –

Chilli con Carne – Time to batch cook some chilli back up for the freezer.

Sunday –

Slimming world beef stroganoff – I want to give this recipe a try, though we have stewing beef to use up so going to adapt the recipe a little.

A few new meals on the menu this week and I know the kids are not going to be fans of some of the choices, but we need to keep encouraging them to try out new flavours and meals this year. I suspect we will fall back on some family favourites like always, however, there are some tasty simple recipes we can try. Just like this delicious-looking tomato and mascarpone sauce for pasta, yummy!

Throughout this year we are going to be working on some new family recipes and these will all be shared over on the food blog, The Family Cookbook.
