Good afternoon and welcome to our first meal plan of April.
Just like that, possibly the weirdest month we have ever witnessed. I’m not sure about anyone else, but in our house, our rules and routines have gone out of the window. We seem to be eating whenever we fancy it, our school day is all over the place and trying to keep everything together is just near on impossible.
Day 1 of the Easter break and I have taken a grip on it all again. Our house has had a spring clean and smells fresh, dinner is in the slow cooker and tomorrow I’m taking a little time out for me. I plan to do a little bit of working out, otherwise, my work clothes won’t fit when we go back! Plus I’m going to paint my nails, I brought a gel nail kit a while ago but never got round to using it.
Meal planning this week is based on what we have in the house, I managed to get a delivery from the greengrocers of some fruit, veg and meat and by some sort of miracle, I have secured a Tesco delivery slot for this week. I just need to get things like cereal, tinned tomatoes, beans etc. It is costing a fortune getting those few bits from the corner shop all the time!

Monday –
Roast chicken with all the trimmings – I didn’t make a roast or stew yesterday as we had some leftover ratatouille to use up.
Tuesday –
Leftover roast chicken stew & dumplings – We’ve had this recipe before from Easy Peasy Foodie before and it is delicious.
Wednesday –
Fry up – Delicious fry up, yum yum!
Thursday –
.Chicken pie – I can’t remember the last time I made a pie, very much looking forward to this.
Friday –
Pizza – We didn’t have pizza last week so we can try again this week.
Saturday –
Keema curry – It’s been a while so I can’t wait to make this.
Sunday –
Takeaway/lazy food – It is our 5th wedding anniversary today. We had plans to do something special however these have been put on hold for now so it is a lazy dinner and a bottle of the champagne we served at the wedding for us tonight!
So we have an easy meal plan ahead, using up things we have in the house where possible and reducing the need to go out this week.
