Our weekly meal plan – 10/01/22

Good morning and welcome back to another meal plan!

The first week of our meal plan for 2022 did not really go to plan. I don’t know why I ever plan for the first week back at work after a break as we are just never prepared or have the energy to cook that week. It doesn’t matter though, we are back this week and then next week we are having our first Gusto box delivered.

This week I am also back on Slimming World so plan to try and get back into better eating habits. I don’t know about anyone else I just feel like I have been eating treats for the last 6 weeks as when you hit December you are able to eat whatever you like as it is Christmas right?! It has all started to bring in bad habits that I need to start breaking and getting back into healthier options for us all. I am going to try and get back to working out, I just find it really hard in the winter to do this. Anyway, lets get back to this weeks meal plan.

Our weekly meal plan – 10/01/22

Monday –

Slimming World creamy ham and mushroom farfalle – Not tried this recipe before so looking forward to giving it a try.

Tuesday –

Chicken fajitas – This is always a winner in our house, it is so simple to make too. I am going to have mine with sweet potato wedges to make them Slimming World friendly.

Wednesday –

Chilli Con Carne – I have a portion of this in our freezer so it is an easy midweek meal for us.

Thursday –

Chicken curry – Using our Rogan recipe, this is already Slimming World friendly so I look forward to this one.

Friday –

Hearty beef stew – It is time to have a little bit of comfort on a Friday night, I will cook this in our slow cooker so it is ready when we get home.

Saturday –

Smoky Pulled Chicken With Chipotle-Lime Slaw – The first of our Gusto delivery, really looking forward to trying this out.

Sunday –

Zingy Basa En Papillote With Vegetable Rice – Something a little different. I am trying to get more fish into our diet, though I am not a huge fish fan!

I have to say I am looking forward to trying some new meals out with the recipes from Gusto towards the end of the week. It is going to be nice to be able to not have to think about what I am cooking and measuring it all out etc. It is not something we can afford to do all the time but whilst there is the offer on the account, I am going to make the most of it. Over the next week, I am going to start looking at more family meals that are suitable for everyone but are also Slimming World friendly for me, I’ll update you next week if I find some to share.
