Good morning and I hope you are surviving the heatwave we have at the minute. We are not built to deal with the heat really, like a typical Brit, I moan when it is too hot and I always find our meals drop off when it is really hot as we just can not be bothered to eat. That means this meal plan will be pretty simple this week!
I really need to get back on top of our meal planning and food shop as it is starting to get out of control again. The rising costs are not helping but I am finding we are doing a few too many trips to the shop in the middle of the week, costing us £5 – £10. Which on its own does not sound much but they soon start to add up with the main weekly shop again. It is all about breaking bad habits and in the last week or so we have slipped into some really bad habits.
My Slimming World plan this week has been awful too, I have not stuck to plan in the slightest and fully expect a gain on Wednesday. I need to get my focus back on what I was doing and stop being so lazy, that is what is causing me to fail there.
Anyway, let’s get back to what we have cooking this week.
Our weekly meal plan – 11/07/22
Monday –
Chilli con Carne – The perfect meal to bulk cook and freeze portions. It is great for bulking out cheaply too using extra vegetables too.
Tuesday –
Chicken fajitas – I can’t remember the last time I made these. So simple to make yet delicious, I like mine with lots of peppers and onions.
Wednesday –
Jacket potatoes – Keeping it simple after Slimming World. Not sure what toppings I will be going for yet, I will see what I fancy on the day.
Thursday –
Fish and new potatoes – Simply oven cooking the fish with minimal fuss and a nice healthy helping of vegetables and new potatoes.
Friday –
Freezer food – We are going to use up the odd bits in the freezer such as the frozen fish and pies!
Saturday –
Takeaway – Catching up with family tonight and planning on getting a takeaway.
Sunday –
Slow cooker curry – It is going to be getting warm again today so plan to shove something in the slow cooker. I have put a curry in but I may change my mind nearer the time.
There is nothing amazing on here, all simple dishes that can be cooked quickly with minimal effort. I really do not want to be standing in a really hot kitchen this week so plan on keeping that time to a minimum. With the warm weather continuing next week there may be some lazy salads coming up on the menu, this will keep the cooking to a minimum and also help with the Slimming World journey too.
We have just 2 weeks till the end of the term and I need to get myself organised a bit better for the holidays, we have nothing lined up and no plans for anything whilst we are cracking through the garden so I could use this time to start getting some inspiration for future meal plans.
