Our weekly meal plan – 12/09/22

Good morning and welcome back to another meal plan.

Last week was a strange week, with so much going on historically here in the UK but also the return to work, it has been pretty tiring all around and the weekend seemed to pass in a blur really. Yet here we are again on Monday morning, planning for the week ahead already.

This week’s meal plan will feature a few new dishes as I try to work on some recipes for our food blog, The Family Cookbook. It is not always easy to create recipes or ones that we all enjoy, so it becomes a bit of a trial-and-error approach. However, at the minute I am working through those recipes that are always a hit! Another thing I have been doing this week is trying to reduce the cost per meal for us, simply because of the rising food cost. I know we are not alone in this and I am constantly seeing posts on social media and blogs about the increasing prices. One option is to downstep on the brands, which we have already done for most things and then the next step is to take out meat/reduce meat as this can be quite expensive. With this in mind, the meals we are making this week are either being bulked out with veggies or are meat-free.

So, let’s get back to the meal plan this week.

Our weekly meal plan – 12/09/22

Monday –

Tuna pasta bake – Yes I know it is on the menu again, but it is easy and a hit with the kids so makes the perfect Monday meal really.

Tuesday –

Vegetable tagine in the slow cooker – I have never made this before so it will be an experiment between a few recipes. It will be interesting to see how this turns out, but I’m hoping it is a success.

Wednesday –

Chicken wraps – Currently I am undecided as to what sort of wraps we will have but it will be delicious regardless.

Thursday –

Spaghetti bolognese – Easy and simple to make plus can be bulked out with carrots, mushrooms and tomatoes to make it go so much further. I always bulk cook this and freeze portions.

Friday –

Freezer food – We will be ending the week with freezer foods, simple but also effective at clearing up some of the space in the freezer too.

Saturday –

Tacos – The kids love tacos as they can make their own, so I will get these out and on the table for everyone to enjoy.

Sunday –

Slow cooker chicken casserole – Another experimental dish, however one that I am hoping pays off as I can imagine it is delicious when it does.

I am hoping that as we add more and more slow cooker recipes to our menus, it will become our way to cook over the winter months. Making life a little easier and one less thing to think about after work each day. There is nothing better than coming home and knowing that the dinner is cooked apart from a little bit of effort from me. It is also a little cheaper to cook using the slow cooker too, I don’t know if I will notice the difference, however, something is better than nothing!  I’ll let you know how some of these new dishes go next week.
