Our weekly meal plan – 12th June 2023

It is that time of the week and we are back with another meal plan!

Last week we stuck to the meal plan mostly, we switched out the dinner on Friday for a takeaway as it was Ethan’s report card. The rule in the house is if you have a good report card or parents’ evening, then you can pick the dinner for the night.

The salmon dish we had at the beginning of the week was delicious and I will be making that again in future. It was simple, quick but delicious at the same time, so a winner in this house. I have a few bits and pieces that need to be used up this week, so I am going to try and use these during the week. It is primarily veggies, so they are easy to add to the other dishes we planned this week.

Lunches are still a bit of an issue when it comes to Slimming World for me, it tends to be leftovers or rolls that I am having currently. So I am going to try and do a little research to find some ideas that are a little more exciting than I currently have been having. If you are following Slimming World or have done in the past and have a suggestion for a tasty syn-free lunch that does not require cooking more than using a microwave, I’d be grateful if you could pop some ideas in the comments box below.

Right, let’s get on with this week’s meal plan.

Our weekly meal plan – 12/06/23

Monday –

Garlic and herb chicken with rice and vegetables – I am using this Slimming World recipe however I am going to cook it in chunks and grilled. This has become one of my favourite ways to cook chicken as it remains moist and it doesn’t take too long to cook.

Tuesday –

Jacket potatoes and salad – Currently I have left this open as it is, I am not sure what topping I will have on there but there is some leftover slow-cooked gammon in the fridge.

Wednesday –

Tacos – This is one of the kid’s favourite meals, so they can create whatever they want when adding their toppings. It is a great way to get them to eat some salad too!

Thursday –

Takeaway – It is Ethan’s birthday today, so he will be picking a takeaway. I am not sure what he will pick but I am sure it will be delicious.

Friday –

Penne arrabbiata – It was switched out last week but I am looking forward to a huge portion of healthy veggies!

Saturday –

Chilli con Carne – I am using up the leftovers in the freezer to make sure it doesn’t go to waste.

Sunday –

Daddy Vs Work Choice – It is Father’s Day, so we will pick nearer the time. The weather will probably have some impact on what we have too as last weekend was really hot!

As the weather is heating up, I am going to try and use the slow cooker and make some easy choices such as leftovers for dinner. I am still going to try and eat good home-cooked meals where I can, it just might need some adjustments depending on the weather! I don’t know about anyone else, however, I find it hard to cook when the kitchen is so hot. Going forward, I think we may have some dishes such as stir fry.
